My cousin might open a taco truck in Oregon and see how it go’s. I wanna know how old you have to be to work in there with him. P.S. He went to culinary school so you don’t have to worry about it
You don’t go to school to learn how to make tacos, but you need it to start a business

I recently settled a labor grievance with my employer. Back pay was paid. The second part of the settlement was the following.

The Company agrees that, if ********** enrolls in and attends culinary school, the Company will make him a Chef In Training, placing him at the twelve month rate. Unless and until this occurs he shall remain a clerk paid at the applicable clear rate. To remain at the Chef in Training rate, the associate must maintain attendance and/or successfully complete the culinary school program in question.

After this settlement I enrolled in a online culinary program at Chefcertification.com for CRT 2016 Culinary Nutrition. This school is run by Southwestern Oregon Community College and Oregon Coast Culinary Institute.

Per their website :

At chefcertification.com, we provide user-friendly online courses that help aspiring Chefs reach their American Culinary Federation Chef Certification goals. By taking courses using our self-paced online service, Chefs earn the required credit hours for initial certification or certification renewal, all from the comforts of home or the confines of work. There are no term schedules; Chefs may register online at any time, begin a course at any time, and complete a course at any time. Simply put, you can start learning today from wherever you want, whenever you have the time available.

On June 3rd I gave my employer my payment and enrollment information. I was told that I needed to provide updates and my certifications as I earned them and my pay rate would be changed immediately as of June 6th.

As of July 1st, after not being paid the Chef in training rate, I am now being told by corporate that online courses do not qualify for this settlement. These are the same course I would be taking at the local community college. They are stating that I am not attending college as I am not in a classroom. My final exams for ACF certification are at the Arts Institute in Nashville for my written and practical exams. I am also assigned an instructor for my online classes.Which her credentials are for the course :

Amber Johnson, RD
Amber has taught in foodservice and culinary fields for the past 12 years. She obtained her Bachelor’s of Science from California State University , Chico and completed her Dietetic Internship at Oregon Health Sciences University (OHSU). She taught Nutrition for Culinary and Food Service Professionals at the ACF accredited Western Culinary Institute and has consulted and trained employees in Nutrition with corporations and retirement centers.

Can they legally do this to me ?

I just got done with culinary school and now have a three month internship to complete before i can get my associates degree.
i got accepted to work at a prestigious hotel in oregon
but the thing is, I have had no real kitchen experience outside of
the culinary institute and have never had a real job before…
i am 19 years old, have a little self esteem issue and feel i cant do it.
im scared, since im more of a quiet person, its hard to
make friends. im afraid i cant live up or wont get connect with co-workers, Do you have any suggestions on what i can do
to make this experience enjoyable or easier on me?

Im a softmore in high school and i was wondering which college i should go for culinary institutes. Im thinking Vegas, Scottsdale Arizona, or portland Oregon.

I’ve eaten Jambalaya before, but I’ve never made it. Today I want to try, but I know nothing about making it. I live in Portland Oregon, and we don’t eat much southern food here. I need some Southern folks to help me out! There are endless recipes on the internet. I have no way of knowing which ones are actually good. So…

How do you make great Jambalaya? If you have a fool proof recipe that you’re TASTED (I don’t need someone to search the internet for a random recipe. I can do that myself) or even just some tips or basic steps, I would love to hear it. I went to culinary school, so I don’t have to have a specific recipe. I understand that sometimes it’s more of a method.

oh, and I have andouille sausage that I want to use.

Jambalaya masters, now is your time to shine!

I recently turned 18. I’ll have been with my boyfriend for 5 years on May 23rd. I’m pregnant. We used protection everytime. I was on the pill, but we still used condoms, because I wanted to get my life started before getting married and having kids. I’m due August 18th. I got pregnant when I was switching birth control pills. My boyfriend knew this. He confessed to me one night when he was drunk that he had poked a whole in the condom, because he wanted to prove that one time couldn’t get you pregnant. Obviously, he was wrong. Today he told me he decided where he was going to college. He’s going all the way across the country to Oregon. I gave him his promise ring back that he gave me after 3 years of dating. He’s broke all the promises anyway. I’m so pissed right now. I had to give up a scholarship to culinary school, because I got pregnant and now I have to go to community college and take care of a baby while he’s doing whatever he pleases. Life’s not fair I know, but it’s not fair that I have to change my whole life, because of his stupidity. Don’t get me wrong, I love this baby. It’s just not the right time for it.

Hey. First of all, I am 16, graduating this year, and hoping to go to culinary school. So i am trying to start up a…Portfolio i think they are called. I don’t think it is required, but would be nice to have. So I am doing a meal for 5 teachers (including the culinary teacher) and their guests. I am aiming for nice, but something i can manage without failing.
I will have 5 stoves/ovens/fully equipped kitchen stations, and as many chefs as i need.

Also, one thing in each course must be Vegetarian (not vegan)

So my menu is:
Starters:
A green salad:
Lettuce, Carrots, Celery, Radishes, Cuke, Mushroom, cheese and a variety of HM dressings. The focus is going to be on the garnishing for this meal.

Apps:
a Scallop Wrapped with bacon ( I live on the Oregon coast, so seafood is common)
and some form a Brothy Soup (haven’t decided yet. May go with Tomato, kinda leaving it up to the other main chef)

Entree’s:
Beef wellington. (w/o the goose liver, and haven’t decided whether i am going to do individual Wellington’s, or slice up a big one.)
HM 3 cheese ravioli (any suggestions for what three cheeses? need to be able to melt with good texture) with a creamy pesto (alfredo/pesto actually) sauce, and toasted Almonds on top.

Dessert:
HM angel food cake, with a berry sauce, and whipped cream.

Take-home:
In a cool little take-out box (like one at a chinese restaurant, but fancier) 3 HM truffles: Milk choco, dark Choco, and Coffee… Does this sound to tacky or cliche? i really want to send them home with a rich decadent dessert, but not totally confident in it yet.

All right, now its your turn. Did this make your mouth water or your stomach turn? let me know. I really am depending on your reviews! I can take criticism, but please, let me know how to make this better or what you would leave out/add…
Also, this meal will be served April 22nd, so i got some time.
Hey remember, i am 16, this is my first time cooking for a bunch of people, and i only will have 2 hours of prep that day… not even that. I will have about 1 1/2 hours of prep.

The beef wellington was requested, and i couldn’t think of anything else to do for vegetarian.
The soup is’t mine. i have no say in what he chooses to do… well actually i do have a say, but i told him its his, so i am leaving it to him.

Thanks for the help though. I will think about doing something impressive… Im really hoping more for the presentation to be amazing, while i know my food will be good…

I am looking to go to culinary school in a year or two *I’ll graduate this year, but i will only be 16… Yay for home schooling!* my parents are unsupportive, so i will have to do this on my own. But i am a straight A student, so really hoping for a scholarship…or 4…

So i need to know, what are some good schools that are going to be affordable? I live on the Oregon Coast, but dont plan on staying here for long. I was thinking of the Cordon Bleu up in Portland Oregon, but they are mainly French cuisine, and i would like a rounded education.

Any Ideas?

Also, i am Really hoping to spend the summer in Juneau Alaska. Are there any schools up there that have summer courses for seniors?

Let me know. I am looking for any option at the time being, and then when i get closer, i will really start looking. Thanks!
My Parents are not supportive b/c the church they go to does everything except forbid it. They feel if i take a higher education then it will take me away from my "spirituality."
They would be happier if I became a missionary rather than getting a degree.
